Job Summary:
We are seeking a skilled and experienced Mexican Bread Baker with a strong background in high-volume production baking . The ideal candidate will have hands-on experience with traditional Mexican breads such as bolillos, conchas, pan de muerto, roscas, and empanadas , and be proficient in scaling recipes, dough preparation, shaping, proofing, baking, and finishing in a production setting.
Key Responsibilities:
- Prepare and bake a variety of traditional Mexican breads in large quantities, ensuring consistency and quality.
- Follow and scale recipes accurately using commercial equipment (e.g., mixers, sheeters, ovens).
- Maintain product consistency, taste, and appearance across batches.
- Monitor fermentation, proofing, and baking time to achieve optimal results.
- Operate and maintain production baking equipment in accordance with food safety standards.
- Ensure cleanliness and sanitation of work areas and equipment.
- Coordinate with production team to meet daily and weekly quotas.
- Assist in inventory tracking and quality control.
- Work early morning or overnight shifts as needed for fresh daily production.
Qualifications:
- Minimum 2–3 years of experience as a baker, with a focus on Mexican bread production .
- Knowledge of traditional Mexican bakery products and techniques.
- Familiarity with high-volume baking operations.
- Ability to work in a fast-paced, team-oriented environment.
- Strong attention to detail and a commitment to quality.
- Food Handler’s Certificate or equivalent preferred.
- Ability to lift 50 lbs. and stand for long periods.
Preferred Skills:
- Experience in recipe development or scaling for large production.
- Knowledge of baking science and dough fermentation.
- Bilingual (Spanish/English) is a plus.
